Ingredients

  • 1 Jar Crofter’s Organic Premium Mango Fruit Spread

  • 1 White Onion (Chopped)

  • ½ Red Bell Pepper (Chopped)

  • ½ Yellow Bell Pepper (Chopped)

  • 1 Clove of Garlic (Minced)

  • 2 Tbsp Apple Cider Vinegar

  • 1 Can (13.5oz) Coconut Milk

  • 2 Tbsp Fresh Minced Ginger

  • 2 Tbsp Yellow Curry Powder

  • ½ Tsp Ground Cumin

  • 2 pieces Boneless Skinless Chicken Breasts (Cubed)

  • ½ Cup Golden Raisins

  • Pinch of Salt

  • Pinch of Pepper

  • 2 Tbsp Olive Oil

  • Cilantro (Garnish)

  • 2 Cups White Rice

Directions

  1. In a large skillet or frying pan, heat the olive oil until hot over medium heat. Next, add in the onions, red bell peppers, and yellow bell peppers. Cook until soft, stirring occasionally. Add in the yellow curry powder, cumin, and ginger making sure to coat the veggies. Next, add in the apple cider vinegar, coconut milk and 4 Tbsp Crofter’s Organic Premium Mango Fruit Spread. Continue to stir over low heat for another 10- minutes. Add in a pinch of salt and pepper to your liking.
  2. Next, remove the sauce from the heat and transfer to a blender or food processor. Puree the sauce until smooth. Once smooth, return the sauce to the same pan. Add in the cubed chicken and golden raisins along with another 2 Tbsp Crofter’s Organic Premium Mango Fruit Spread. Stir well.
  3. Return the sauce along with the chicken to a medium simmer and cook for an additional 10-15 minutes or until the chicken is entirely cooked through. While the chicken is cooking in the sauce, make the rice and dice up some cilantro for garnish.
  4. Once chicken is finished cooking, remove the pan from the heat. Serve the mango curry over white rice and garnish with cilantro. Enjoy!
