Delicious buttery, flaky puff pastry cooked to golden-brown perfection filled with a tasty mixture of cream cheese, black currant fruit spread, and a dash of fresh lemon zest—these Easy Black Currant Cheese Danishes are sure to be a hit.   1. To begin, preheat the oven to 400°F and line a baking tray with parchment paper. Give the parchment paper a light spray with non-stick cooking oil. Set aside. Allow your puff pastry sheets to fully thaw (about 1-2 hours) at room temp so that they are easy to work with.
  2. Once puff pastry has thawed, lightly flour your work surface and spread the puff pastry out on to the surface. With a cup, roughly about 4 inches in diameter, cut out 8 circle shapes out of the puff pastry dough but don’t remove them just yet. With another smaller cup, about 2-3” in diameter, score another circle in the center of the previously made circle and perforate the inner circle with a fork.
  3. In a medium mixing bowl, combine the cream cheese with the Crofter’s Organic Just Fruit Black Currant Fruit Spread and the lemon zest and whisk together. Next, scoop out about 1 tbsp and place it in the center circle of the puff pastry. Try not to go outside of the scored circle.
  4. Brush the edges of the puff pastry with a beaten egg and then sprinkle with a course sugar. We used an organic cane sugar. Carefully remove any excess puff pastry dough and transfer the Danishes over to the prepared baking pan. Bake for 15- Minutes or until the Danishes are a golden-brown color. Remove from oven once done and let cool slightly. Enjoy!
