Easy Apricot Sweet & Sour Tofu Stir Fry in under 30 minutes? You bet! This recipe for Apricot Sweet & Sour Stir Fry is a plant-based, healthier twist on the classic Chinese food sweet & sour dish. It is much healthier for you compared to your local Chinese takeout spot and won’t take you all night to prepare. Tofu can be very bland to taste and boring to cook if you aren’t familiar with it or know how to cook it. At first, a lot of people say “Ew, Tofu” simply because of the texture. A trick to easily get around this is by removing as much excess moisture as possible from the brick of tofu before you cook with it. Simply wrap the tofu in some paper towels, place it on a large plate and then set a large pot (or pan) with some decent weight on top of it. The weight from the pot (or pan) on top of the tofu will squeeze the excess moisture out, allowing it to become crispy when cooking with it. Not such a bad texture now, is it? For the sauce:

For the Stir Fry:

  • Fresh Broccoli

  • Fresh Snap Peas

  • Diced Carrot

  • Extra Firm Tofu

  • Hoisan Sauce

  • Soy Sauce

  • Wild Brown Organic Rice


  1. To get a bit of crisp on your tofu, open the package and drain the tofu from the water. Wrap the tofu in a few pieces of paper towel and then set it on a plate. Place a heavy sauce pan or pot on top of the tofu to release any moisture or extra liquid from it. This will help the tofu become crispy when you cook it in the sauce. Once the tofu seems dry, cut into bite sized pieces and add it into the pan with the apricot sweet & sour sauce.
  2. While the tofu is cooking, in a large wok, stir fry the broccoli, snap peas and carrot until just charred. Add in the Hoisin sauce and the soy sauce and continue to let cook. About 5 more minutes. Add in the tofu which should be fairly crispy by now and toss lightly with the veggies.
  3. On a bed of wild brown organic rice, place the stir-fried veggies and sweet & sour tofu. Garnish with sesame seed and green onion. Enjoy!
