Curried Pork Tenderloin

The only way to cook pork tenderloin from here on out. You’ll be amazed at how flavourful this pork tenderloin turns out when using only 4 ingredients! Moist, not dry, delicious apricot flavoured curried pork tenderloin that everyone will love. Pork Tenderloin has a reputation of being this dry and B-O-R-I-N-G to eat meat that not a lot of people enjoy eating. We changed that 100% with this recipe. The way the pork gets coated in our apricot fruit spread, Dijon mustard and curry paste keeps the pork nice and moist while developing a delicious sweet yet spicy crust on the outside of the tenderloin. Don’t be intimidated by the curry aspect of this recipe, if you are brave enough to whip up your own then go for it! If not, prepared curry paste can be purchased from almost any grocery store and works just great!



  1. Preheat oven to 450°F (230°C).
  2. Line a baking tray with aluminum foil or parchment paper and place the pork tenderloins on the tray.
  3. In a small bowl, mix together the Crofter’s Organic® fruit spread, Dijon mustard, and Indian curry paste. The mixture will look and feel lumpy.
  4. Brush the mixture lightly onto the pork tenderloins, just enough to coat them.
  5. Cook the pork in the middle of the oven, uncovered. Spoon more of the Apricot mixture onto the pork every 10 minutes while cooking until an inserted thermometer reads 155°F (70°C), about 30 to 35 minutes.
  6. Remove from oven and let the pork stand for 5 minutes.
  7. Cut the pork into thick rounds and serve. Enjoy!
