Concord Grape Focaccia Bread

Ever tried making your own home made bread? Honestly, it can be a pretty scary process. However, no need to be scared with this recipe, even the most beginner baker will be able to pull off this recipe with ease and come out the other side looking like a pro! Extremely popular in Italy, focaccia bread is a traditional flat bread topped with olive oil, spices and very commonly black grapes, berries and other vegetables among other things. Focaccia bread is also believed to be a very early form of modern pizza. How cool is that?! The best part about this Concord Grape Focaccia Bread? Eating it. Hands down this is one of the yummiest breads out there and it is extremely versatile. Dip it into a delicious mixture of olive oil and balsamic vinegar, spread your favourite melted cheese in-between two slices for the most adult grilled cheese of your life or serve it with extra grapes and some of our concord grape fruit spread to take this focaccia bread to the next level of grapeness. Ingredients

  • 3 cups Bob’s Red Mill Gluten-Free flour

  • 3/4 cup warm water

  • 3/4 cup olive oil

  • 1-2 tsp fresh rosemary

  • 2 tsp instant yeast

  • 1 1/4 tsp Kosher salt

  • 2 tbsp agave syrup

  • 1 large egg

  • 2 cups fresh black grapes

  • 1/2 cup Crofter’s Organic Concord Grape Premium Spread

Directions

  1. To start, combine the yeast and warm water in a small bowl and let stand for 5-10 minutes. Transfer the yeast to a large bowl and add in the flour, salt, ¼ cup olive oil, and mix gently until blended. Add the rosemary and the concord grape fruit spread and continue to mix for another 5 minutes. Dough should be really sticky. Adjust the consistency of your dough by adding more flour if it’s too wet or more oil if too dry. You can use an electric mixer if you have one, it will be much easier to work the dough. Place the dough in a large, well greased pan and then cover it with a towel or cling wrap. Let stand for 1 hour giving the dough time to rise.
  2. Drizzle a little olive oil into a 17x12 baking pan and then place the dough in the baking pan. Gently press the dough down and into the corners of the pan evenly using your hands. Cover with plastic wrap and let sit in a warm place for 1 hour. Once it has been 1 hour, remove the plastic wrap and gently push your finger directly down into the dough to create a whole. This process is called “Dotting” and helps preserve air in the dough.
  3. Preheat oven to 425°F. Scatter grapes over top of the dough and drizzle with the remaining olive oil. And top with a sprinkle of salt. Bake for 30-35 minutes or until the edges of the bread are a nice golden-brown colour. Serve warm or at room temperature.
