Black Currant Mojito

  1. Combine the Caster Sugar, 1-2 Fresh Mint Leaves, Fresh Juice from 1-2 Lime wedges and Crofter’s Organic Black Currant Just Fruit spread in to a small bowl and mix lightly. Just enough to break down the mint leaves to release their flavor.
  2. Remove the leaves and place the Black Currant mixture in to the bottom of a Collins glass.
  3. Fill the glass half way with crushed ice and pour the Rum over the ice.
  4. Add more crushed ice to fill the glass and top with soda or tonic water. Garnish with a lime wedge and a sprig of mint. Enjoy!
